What’s the Inspiration?
Chai started in India, by infusing spices and tea leaves in milk. It’s usually a recipe that’s been passed down from grandmother to mother to daughter, generation by generation. Each house will have its own chai flavour. And this one’s our favourite.
As you boil the kettle, look around. See the colours of saris in your fruit bowl – jade green grapes, ruby red apples, bright orange satsumas. Open your cupboards. Run your fingers along your spice rack – cardamom, cumin, turmeric and chilli. Breathe in the smell of Khari Baoli, Asia’s biggest spice market. Feel the steam of the kettle fill the air with humidity, like the hot streets of Chennai. Taste our spicy chai, imagine the tradition passed down through generations.
